In version 0.69 and earlier, I notice the lava monster is the grey color until hit.. then when parts fall off, they become red lava .. no jumping from back and forth between colors as it walks. In 0.69a, this changes to your observed behavior. |

Judging from the arcade photo (even though low quality), the blue colours in the lava monster palette are correct. |
